Aptly housed within Tai Kwun, Hong Kong’s new heritage centre for the arts, Old Bailey pays homage and home to the culinary traditions of Jiangnan - a region long credited with nurturing creative communities that came to exist through a discourse of grounded hospitality.
Old Bailey references the ingrained Jiangnan practice that over going out to eat, many would congregate in homes for considered meals, diligently sourced and cooked by private chefs. To enhance this notion of private and homely hospitality, Basel-based architects Herzog & de Meuron, have partnered with local talents Adonian Chan (Trilingua), Mina Park (Sook) and Nana Chan (Teakha) to build upon Yenn Wong of JIA Group’s vision for the space.
The menu at Old Bailey paints a tale of time and place. So too the produce & people who deliver beautiful things to our kitchen. The compositions within Jiangnan food speak to a delicate balance, created to calm both mind and palate. This purity stems from sourcing - one that contains an unwavering admiration for nature and the seasons. Executive Chef Wong Kwan Man steers clear of preservatives and additives where possible. Over 80% of the vegetable buy is organic, while meats are diligently selected as are noodles, vinegars and beancurds from a network of artisan producers. Gluten free soy sauce is employed in several dishes, while the pickles and fermented condiments are house and hand made.
From noon until close, casual dining can be enjoyed in Old Bailey’s lounge, a beautiful space that overlooks Tai Kwun’s rooftops and the former prison yard. An edit of dishes from the restaurant is served, so too a selection of cakes - perfect with a pot of tea sourced from Plantation by Teakha, or a coffee made on beans roasted by Redback. The cocktail collection, created by JIA Group’s awarded Bar Manager, James Barker, highlights traditional and lesser known ingredients through classic interpretations.
The best entrance for Old Bailey is via ‘Blue Gate’ on Old Bailey street. Once inside the JC Contemporary building, the stairs or lift can be taken to the second floor.
